GMG Recipe of the Month – June 2023

  • 1 Bell Pepper
  • 18 Roma Tomatoes
  • 8 Jalapeno Peppers
  • 1 White Onion
  • 1 Red Onion
  • 2 Heads Garlic
  • 1 Bunch Cilantro
  • Juice of 2 Limes
  • Salt & Favorite Seasonings to Taste

Preheat your Green Mountain Grill to 225°F. Cut peppers, tomatoes, and onions in half. Cut the tip off the garlic heads to expose the cloves and wrap in aluminum foil. Place veggies on grill for about 1.5 hours. Combine smoked veggies, cilantro, lime juice, salt, and favorite seasonings in a blender and pulse until combined to the desired consistency. Place in an airtight container in the refrigerator overnight. Enjoy with your favorite tortilla chips for a smoky garden fresh snack!

GMG PRO TIP: When prepping your veggies, place them on wire cooling racks or grill mats to make transferring them to the smoker easier.
